It’s Not a Party Without Cake

It was the incomparable Julia Child who said “a party without a cake is just a meeting”, and I completely agree. The magic of cake is that it’s very presence lets everyone know that they’re at a special gathering and something or someone is being celebrated.

At the beginning of next month (the first weekend in June), we celebrate the Queen’s Platinum Jubilee - 70 years on the throne! If that’s not a reason to wheel in a cake, I don’t know what is. In honour of all of the street parties that will be taking place up and down the country, the Fab crew decided to share our Citrus Heaven cake recipe with you. It tastes amazing and will definitely bring the “wow” factor to your parties. Happy eating:)

Fab Patisserie Citrus Heaven Cake

Ingredients

330g Caster sugar

330g butter (salted)

6 medium sized eggs (whisked lightly)

330g cake flour / self raising flour

1 tsp baking powder

Grated rind of 2 large lemons

Grated rind of 1 orange

Grated rind of 2 limes

3 tbsp lemon juice

Frosting:

1kg icing sugar

6 tbsp unsalted butter

Juice of 2 oranges

Method

Preheat oven to 140C, and line 3 20cm(8”) cake sandwich tins

1) Cream butter and sugar on high for 2-3 minutes.

2) Add eggs to butter and sugar and mix for a further 3 minutes until smooth.

3) Add flour an baking powder and mix until smooth.

4) Add lemon, citrus, lime rinds, and lemon juice and mix on medium for

1 minute.

5) Split cake mixture evenly between the 3 cake tins and bake cakes until tester/

knife comes out clean (45 mins or so).

Frosting:

1) Place icing sugar and butter in mixer.

2) Pour half of juice into mixer and turn mixer on at a low speed.

3) Add remaining juice slowly until desired frosting consistency is achieved.

4) If your frosting mixture needs to be softer add more orange juice.

Decorate cake (once completely cooled):

1) Spread a tablespoon of frosting onto your cake plate /stand.

2) Place first cake layer on top of frosted plate.

3) Place a generous amount of frosting on top of cake.

4) Spread frosting around top of cake.

5) Place and spread a thin layer of lemon curd on top of frosting.

6) Place next cake layer

7) Repeat steps 1-6

8) Decorate top layer with frosting only, or top frosting with berries of your choice.
